Don't forget the mashed potatoes! And if you use chicken broth seasoned with roasted garlic for part of your liquids, you get garlic mashed potatoes the easy way, which taste fantastic with this roast.

I'd say, "bon appetit," but that doesn't sound right for a Pioneer Woman recipe. How 'bout "hope the grub's good," or "over the lips, past the gums, look out stomach, here it comes"?

Mmmmmm...all this talk of PW's pot roast makes me want to try it! I love pot roast with the carrots, onions, and potatos that you toss in with it, and how they all just melt in your mouth.
