Alternately called, 'Kevin's favorite cake'
That's a hint
For, like, for instance, if you really liked (wink) my youngest brother and ever needed to make him a cake or something. He likes this one. Makes him smile every time. Totally the recipe to have in the arsenal for if you ever needed Kevin to do something, or say yes to something, or to agree to something, or...and....oh. I'm rambling again, aren't I?

I had all the ingredients sitting in the cupboard, so I decided to make it for our Sunday dessert.
Eclair Cake
1 lb box graham crackers
2 small pkg instant french vanilla pudding (vanilla will do, but french vanilla clinches it)
3 1/2 cups milk
1 9 oz container of Cool Whip
Butter bottom of 9 x 13 pan (I use my 9 x 13 tupperware), line with graham crackers.
Mix pudding with milk - beat at medium for two minutes.
Blend in Cool Whip.
Pour half the mixture over graham crackers, then place second layer of crackers over pudding.
Pour remaining pudding mix over and cover with another layer of crackers. Refrigerate for two hours and frost with:
2 pkg Redi Blend pre-softened chocolate
2 tsp white Karo syrup
2 tsp vanilla
3 T soft butter
1 1/2 cups powdered sugar
3 T milk
Beat ingredients together until smooth. Spread on cake. Refrigerate 24 hours. Call Kevin.
pssst. Kevin - it looks like the unsupervised bedtime servings were a little large, but there are still 2 pieces left. I can't guarantee that they'll be here tomorrow. If I'm asleep this week, wake me up - I don't have time for sleeping......








Omgoodness. That would likely be MY favorite cake... if anyone knew enough to make it for me. Mmmmm.

If you are lazy, like me, take a can of Duncan Hines frosting and nuke it for about 1 min. Stir and pour over dessert, then spread it out. :-)
