'Tis the season for Christmas cookies. I actually don't bake a lot for the season - but I like to have a few things on hand - and the kids do enjoy helping.
The first cookie we baked this season was the Chewy Milk Chocolate Oatmeal Cookie made with Christmas M&M's. They were just okay - but they did all disappear before I got a chance to take their picture. They were new for us this year, something I made when I was looking for a quick and easy recipe using ingredients I had on hand.
The second cookie, I made last night. This is one we grew up with and I found the recipe here online. The only place that I ever can count on finding Almond Bark is at Walmart - where I made a special trip to last night just for these. They are quick and easy and pretty tasty.
The third one I also made last night. Late night making of these is required in our house for several reasons. One - they need to sit out longer to set - and the only place we can do that in this house is on my busy kitchen table and two - it does help if the little boys are sleeping when I make these, else they'll gobble them all up. Sometimes I make them with helpers, sometimes I don't. Last night - I didn't. It was pleasant.
Also - a note... you need to know that I sang for that plate those cookies are on. It was gift that was passed around at the ladies party and when it came to me, it said - in a firm tone - 'sing a line from Here Comes Santa Claus'. Now everybody knows that I don't sing. I was wishing I was quicker on my feet tho because I would have sang it the way they do at the Pennala party (Pa's people) every year. Their version goes like this: Here comes Santa Claus, Here comes Santa Claus, Right down Santa Claus Lane" that part is sung with the spirit and gusto that you'd expect from 200 plus carolers...and then it takes a quick nose dive and becomes, "mmmphh laa uh ha, hmmm mmm uuuuh hmmmm, mmm nnnn hmmmmm....." very quiet like. Every.single.year. It's awesome.
Anyway.
The recipe that I use for our Hershey Kiss Cookies is the one from my mother's recipe box and it goes like this:
Cream Together:
1 Cup Sugar
1 Cup Brown Sugar
1 Cup Margarine (we use butter)
1 Cup Creamy Peanut Butter
Beat in:
2 Eggs
1/4 Cup Milk
2 tsp Vanilla
Mix together and add:
3 1/2 Cup Flour
2 tsp baking soda
1 tsp salt
Form dough into balls (I like to chill my dough for a bit first - last night, for instance, I put it outside for a couple hours - but I've made them without chilling also) Roll into sugar Cook at 375 for 10-12 minutes. Immediately put kiss on top of cookie when it comes out of the oven.
I use about 1 1/2 bags of kisses for this recipe - and that's with very mild kiss snitching.
And why are they considered a Christmas cookie anyway? Shouldn't they be a Valentine cookie?
