We have a very busy holiday week coming up quickly in this house, so my goal this week is to get some baking done and put away everyday. Yesterday the focus was the can of pumpkin puree. I made a pumpkin roll (in the freezer) some whole wheat pumpkin bars (a little bland, but salvageable with a little bit of leftover pumpkin roll filling on top - also in the freezer) and some pumpkin chocolate chip muffins. Those were so good, they never did make it to the freezer. Oops.
I used this recipe, but with a few of the suggestions that were listed in the comments. I used one cup of the pumpkin puree, light brown sugar instead of white, 1 1/4 tsp of cinnamon, 1/2 tsp of nutmeg, and I didn't have any ground cloves on hand so I added just over a 1/4 tsp of cardamom.
They were really really good and the kids were wishing I had made more than 12.








Isn't AllRecipes a fantastic resource? I use it all the time. Just put in some keywords, get your listing of recipes, then sort by rating and pick one of the top-rated recipes. It's great to be able to know ahead of time that if 753 people rated a recipe 4 or 5 stars, you'll probably like the results! And I love that you can read other peoples' comments to see what changes you should make ahead of time.

Got the recipe.. sounds like something yummy for those cold winter mornings that are coming.. also might whip up a few for the bake sale at our VFW hall this weekend.. Thanks..
