If ever there was a week that needs lists, it's this one. I think every one in the house has an event or something to attend today alone. One thing on my agenda is today is to make and walk a pan of pannukakku up the hill for the heritage party in Wendy's class. I'm choosing to use Gertie's recipe - the one my mother uses. If I remember, I'll edit and add a photo later. *smile* This is also what we often have for breakfast on Christmas morning
Gertie's Pannukakku
Stir together:
1 and 1/3 cups flour
2/3 cup sugar
1/2 teaspoon salt
gradually add 4 cups of milk and 8 eggs
beat until blended, then add 1/3 cup melted butter
Bake in pans preheated with 2 and 1/2 Tablespoons butter in each pan
(approximately 3-1/2 cups of batter per pan)
two 9x13 pans at 425 degrees for 25-30 minutes
* In Finland it was more often served with jam or a fruit spread, but we American Finns have a tendency to serve it with syrup.
two minutes out of the oven (first out of the oven, it's raised to the top of the pan)
On the plate with a dollop of fruit spread. We usually cut larger pieces, but I cut them small for the fifth graders. The whole pan went - next time I'll bring both pans.

Our recipe even calls for a little orange juice in the batter. 'Round here we just call it Finish Pancake and sometimes sprinkle it with powdered sugar before serving, pretty and yummm! The kids are going to love it!!

Ooooohhhh! You're supposed to bake it in high-sided pans! Mine always puffs up and spills over the edges of my shallow 9x13s. I'm gonna try this recipe over the one I've got.

Okay, I made it this morning and the boys voted it better than my other recipe. I substituted a little whipping cream for a portion of the milk too. Figured with that much butter in there, might as well go all out!

This looks delicious! We called it Kropsu and ate it with a dusting of sugar. Can't wait to make it again!
